Here is a recipe that I discovered when my aunts Julie and Corinne prepared it brilliantly for us on the BBQ, during our stay in the Bas St-Laurent during our vacation this summer.
A great way to enjoy the flavors of the sea and put your dill in the spotlight!
Salmon preparation: Finely chop the fresh salmon, but leave a few pieces for texture.
Mixing ingredients: In a large bowl, combine the chopped salmon, egg, breadcrumbs, mayonnaise, Dijon mustard, lemon juice, onions, dill, garlic, salt, and pepper. Mix well until all ingredients are well incorporated.
Forming the patties: Divide the mixture into 4 equal portions and form them into patties with your hands. Make sure they are tightly packed to prevent them from falling apart during cooking.
Cooking: Heat a frying pan over medium heat with a little olive oil. Cook the salmon cakes for about 4-5 minutes on each side, or until golden brown and cooked through. You can also cook them on the barbecue.
The secret is in the sauce: Make a dill sauce by mixing mayonnaise, capers, garlic, dill, and hot sauce
Burger Assembly: Lightly toast the burger buns. Add a generous amount of dill sauce to each bun, then place the salmon patty on top and add your favorite toppings (lettuce, tomato, cucumber, grilled eggplant, etc.)
I hope this recipe inspires you to try dill the next time this herb is available in your herb selection in your organic basket!
