Daikon radish is an amazing vegetable that keeps really well and is ideal for adding a bit of crunch, a beautiful white color, and a subtle spicy flavor to our winter salads.
The other day, on a slightly gray afternoon, I felt like varying the colors, textures, and flavors of my meal, and I concocted a small grated carrot salad to which I added half-moon slices of daikon radish and Thompson dried raisins. I drizzled it with a dressing made of yogurt, mustard, and maple syrup, and I was really satisfied with the result. My children approved too, and then I was a proud dad!
If you want to use a humble daikon radish to enliven your gloomy meals, here's the salad recipe and dressing:
For the salad:
3 medium carrots, grated
1 daikon radish, cut into thin half-moons
1/3 cup organic Thompson dried raisins
For the dressing:
3 tablespoons plain yogurt
1 tablespoon Dijon mustard
1 tablespoon maple syrup
1 tablespoon apple cider vinegar
Salt and pepper to taste
Prepare the salad:
Grate the carrots and place them in a large bowl.
Cut the daikon radish into thin half-moons and add to the carrots.
Incorporate the Thompson dried raisins.
Prepare the dressing:
In a small bowl, mix the yogurt, mustard, vinegar, and maple syrup.
Season with a pinch of salt and pepper to your taste.
Assemble the salad:
Pour the dressing over the vegetables and mix gently to coat the ingredients well.
Serve:
Serve immediately or let rest in the refrigerator for 15 to 30 minutes to let the flavors blend even better.
