St-Hubert peas may be small, but they have a lot to say!
This soup pea was brought to New France in the 17th century by European settlers. Peasants ate peas during the hunting season, and so they named this pea honor of St-Hubert, patron saint of hunting. (Potager d'Antan has a great blog post about this on their website).
This is an early and productive pea that grows about 1 meter tall. The dry pods are very easy to shell.
The St-Hubert pea is a rare and endangered variety. We often hear about the importance of protecting biodiversity, but we sometimes forget that it can also be found on our plates.
